4 Tips for a Busy Week and Meal Plan Sunday

This week will be the week that tests my sanity.  This week is a working moms gauntlet.  Three days in off-site meetings starting way before my usual start time and going way past my usual quitting time will require extra childcare and planning.  This also coincides with a number of kid activities in the evenings.  When I saw this “perfect storm” colliding on my calendar three weeks ago, I decided to take Friday off to recharge or face plant on the couch!  I think the foot spa will be calling my name!

Here are 4 things I am doing TODAY to maximize my success this week:

  1. Prepare – I cleared my schedule for this weekend allowing me extra time to organize, clean, and rest.  How I start this week will determine how I finish this week.
  2. Visualize - I am visualizing an easy week.  Executives, corporate strategy, upteen PowerPoint presentations, little people who still need to be cared for, three after school activities, training schedules – No worries, I’ve got this!
  3. Map it out – I have everything written down by day/time.  Who is responsible for what, who needs to be where, and what is happening next.  Choreographed like the Pirates of Penzance with the military precision of Patton! Don’t forget to communicate the plan with all involved!
  4. Forgiveness – however this week winds up, whatever works or doesn’t work, I have done my best.  I know that.  No guilt.  I have already forgiven myself for any missteps or forgotten moments.

Now on to the Meal Plan:

Sunday: Salmon and Veggies.  I have been roasting a GIANT tray(s) of Beets, Brussels Sprouts, and Butternut Squash.  This way I have leftovers to take with me for lunch.  Best part – 95% of our fruit and vegetables are now coming from our local farmer’s market!  We have had a lot of requests for how to cook Salmon – we are working on this for those who requested.

Monday: Taco night for the kids.  I am having Cheesy Chicken and Salsa Stuffed Sweet Potato.  This looks amazing and EASY!

Tuesday: Kids are eating at my dad’s house.  Business dinner for me.  John usually does eggs as a quick meal.

Wednesday: Yet another crazy night!

Thursday: Cobb Salad with Balsamic Vinaigrette.  I am going to make mine with steak instead of chicken.  If you don’t like Balsamic Vinaigrette, try this Lemon Honey Dressing.

Friday: Something easy! Spaghetti squash and meatballs sounds good.

Saturday: Take OUT!

  3. I am a huge believer in visualization for everything! I try to visualize my day on my run; going to bed happy thinking it was a good day. I truly think it works, therefore I am sure you will have an easy week! The chicken sweet potatoes sound delightful. I am having sweet potatoes after my long run today, cant wait :)

  4. That’s a great approach…I need to try visualization and work on forgiveness! Sometimes I don’t help matters by adding additional unneeded stress in a busy week!

      Janelle – Why to we always do that? Add stress when we are already at our limit? That’s why I write out a plan for those weeks. It reminds me there is no room for anything else.

    Cheese chicken salsa STUFFED into a potato? Um, that is my kind of meal. Also, definitely swap the chicken for the steak. ;)

  9. I’ve been having a lot of those weeks lately – busier than normal. I do wonder if they will start to become the new normal.
    Then I’d readjust.
    I hard boil eggs, make pots of mac and cheese, do breakfast for dinner nights, and yes, arrange meals with grandparents.

      Tamara – I love that you checked in from Florida!! I remember when my kids were your kids ages. It seemed like life changed on a dime. There was always a new stage and what worked yesterday didn’t work the next day. They were great lessons in my ability to adapt mostly to stressful stimuli :-)

  10. Leave it to me to relate all of your tips to running. :) I tend to do all of those during a training cycle! Visualization is so important and I’ve found I’m more successful after doing it.

  11. I’m coming to you today via the NE Bloggers Pinterest link up, even though you’re in my SITS tribe too! I love how intertwined our worlds are!

    That looks like a great menu for the week! Tonight we’re having pulled pork, broccoli, and rice. And that is about as far as I’ve gotten for the week. We’re leaving on Friday night to spend the weekend at MIL’s house on Cape Cod, so it was a lighter grocery shop week. I’ll end up forging in the pantry and freezer to cobble a few meals together!

  13. Thank you for including my Spicy Fish Taco Minis. I definitely need to try the Lemon Honey Dressing. I love making our dressings fresh but haven’t expanded much past avocado ranch and balsamic.
