One of my favorite pantry staples are my cans of chickpeas.  It’s my opinion that the chickpea should win “THE most versatile legume” award.  They can be roasted, tossed in a salad, mashed into “tuna”. made into a desert, thrown in a chili and the list goes on and on.  As I write this post I am dunking cucumbers into buffalo flavored humus.  When John and I stayed in city last year for the NYC Triathlon, there was a line around the falafel truck at 4:00 in the morning!  Allow me to prove to you in 5 recipes exactly how versatile this lovely legume can be.

Notes on the Buffalo Ranch Roasted Chickpeas: this recipe is easy to double, triple and even quadruple! I have also substituted Parmesan cheese for the nutritional yeast and it works.  I like mine best when I am heavy handed on the parsley.  I roast mine for longer than what the recipe says.  I like mine really crunchy!

Notes on the Chickpea Cutlets: I haven’t made these since I started eating meat again but these would please a meat eater.  They are hearty and can be used in any chicken dish like a Marsala or Parmesan.

  1. Mmmm couldnt agree more! I love to buy them raw, soak them and cook them myself too! These are some great recipes! I have tried the blondies, and they were great! I actually made black bean cookies a few weeks ago…..still have to put the post up, and they were good too!

    Chickpeas are so good for you, I need to make sure I eat more of them with the races coming up! So excited for Cherry Blossom, I really hope we can meet :)

  2. We love chickpeas in my household too. We love mixing chickpeas with couscous, pine nuts, and feta cheese for a quick vegetarian dinner. I’ve never tried using chickpeas in a dessert though!

  3. Homemade hummus with fresh veggies is a favorite in my house. Yum. I never thought to try chick peas for dessert. Definitely going to check out that blondie recipe.

  6. I love chickpeas. Once I opened up a can of them, poured it into a bowl, added olive oil and sea salt, and called it lunch. (I’m not much of a cook)
    I love the idea of using them for desserts! I’m so going to try the Blondies or the Parfait.

    I didn’t think I liked chickpeas until I finally made humus last May – loved it!!
    Since then I have added chickpeas to several things especially if I’m going for a Mediterranean flavor.
    I have been wanting to roast some and love the look of the barbecue ranch roasted ones.
    It might take me a little longer to come around to putting them in desserts – maybe one day.

  8. I wish I could handle chickpeas but unfortunately, they make me feel so bloated! Strangely, hummus in small doses work well!

    A versatile food- I suppose I’ll be boring and say eggs!

  11. I like hummus but not plain hummus as I’m not a huge chickpea fan. If a fan at all. But I do have a cucumber in my fridge right now and I’d love some hummus for it. Yum!
